For vada batter soak urad daal overnight. Drain the water next day and grid it with ginger and chilli. Add salt as per taste and before deep frying add a pinch of soda and wisk for 2 minutes. Remember vada batter should be thick. Deep fry the vadas and sock in water for 5mins.
Now press the vadas to remove water and place it in your serving plate. Pour semi thick salted curd over it. Sprinkle chat masala, roasted Jeera powder, red chilli powder, coriander-mint-chilli-lemon chutney & tamarind chutney.
