My most most most favourite gujarati dish…khichu…so simple and flavourful to eat. Actually it is a dough which is used to prepare traditional papad you can find people selling it in Navaratri stalls in Gujarat and if you are lucky enough even in other cities.
INGREDIENTS
Rice Flour – 1 cup
Salt as per taste
Baking soda – 1 tsp
Ginger and Chilly paste – 1 tsp
Cumin – 1 tsp
Groundnut oil – 1 tsp
Methiyu marchu / red chilly powder – 1 tsp

INSTRUCTIONS
- Heat water in a pan, add salt, baking soda, ginger chilly paste, cumin seeds and boil for 2 minutes till you get nice smell.
- Add rice flour slowly and keep mixing it so that no lumps are formed.
- Cook till it forms soft dough without lumps.
- Transfer it to a steaming pan and steam for 10 to 15 minutes.
Serve hot with chilly powder and groundnut oil.
