Coffee loaf cake – Eggless & no butter

INGREDIENTS

  1. Milk – 100 ml
  2. coffee powder – 2 tsp
  3. 15 grams flaxseed powder
  4. 3 tablespoon water
  5. whole wheat flour – 200 grams
  6. baking powder – 1/2 tsp
  7. baking powder – 1/2 tsp
  8. A pinch of salt
  9. coconut oil – melted
  10. Honey – 120 ml
  11. Yogurt – 120 ml
  12. Pumpkin seeds to garnish – 2 tablespoon

 

Drizzle Syrup

  1. Milk – 60ml
  2. Cocoa powder – 12 grams
  3. Coffee powder – 1 tsp
  4. Honey – 10 ml

INSTRUCTIONS

  1. Preheat the oven to 180 Degrees.
  2. In a cup mix milk and coffee powder and keep aside.
  3. Take another bowl mix whole wheat powder , baking powder and baking soda together.
  4. In another bowl whisk honey, yogurt,coconut oil, milk and soaked and pureed flex seeds, till no lumps remain.
  5. To this add the flour mixture slowly and mix well.
  6. Pour the batter in a loaf or a cake mould and bake for 30 to 35 minutes.
  7. Remove the loaf and allow it to cool for atleast 1 hour.
  8. Mean while prepare a drizzle for the loaf by mixing milk,cocoa powder , honey and coffee powder.
