Sandwich Dhokla is a mouth watering savoury from state of Gujarat. There are many different varieties of dhokla recipes cooked across India especially in Gujarat and this is one of them. With some pre-planning, this sandwich dhokla are easy to cook and a good snack to serve to children as well as adults. The batter is quite similar to that of idli so if you are making idli one day the other day you can make this dhokla out of the same batter
INGREDIENTS
Dhokla batter:
- Curd – 1 cup
- Rice – 4 cups
- Urad Daal – 1 cup
- Salt as per taste
- baking soda – 1 tsp
Chutney:
- Fresh washed coriander leaves – 2 cups
- Fresh mint leaves – 1/2 cup
- Ginger – 1 tsp
- Lime juice – 1 tsp
- Salt as per taste
- Green chilly – 4 to 5
Tempering:
- Oil – 2 tablespoon
- Sesame seeds – 1 tsp
- Mustard seeds – 1 tsp
- Cumin seeds – 1/2 tsp
- Asafoetida – 1 pinch
- Curry leaves – 6-7 leaves
- Green chilly chopped – 4 to 5
INSTRUCTIONS
- In 2 separate bowls take rice and urad daal and soak it with water overnight.
- For chutney mix all the ingredients in a mixer and keep it aside.
- Drain the water and grind both together and add curd to it and let it ferment for 3-4 hours.
- Now add baking soda and 1 cup of water to the batter and mix it nicely.
- Grease the plate and pour the batter in to the dhokla tray , sprinkle it with red chilly powder and steam it for 5 to 10minutes.
- Now apply chutney on top of it and pour batter on top of it, cook for 10 minutes.
- For tempering take oil in a pan, add sesame seeds, mustard seeds , cumin seeds,asafoetida , green chillies and curry leaves once the oil is hot.
- Pour it over the dhokla tray and cut it in to pieces.
Serve it hot with chutney
