Must try this colorful and flavorful Mint coriander rice for dinner tonight. You can use the leftover pudina chutney to prepare this aromatic Pudhina pulav.
INGREDIENTS
- Basmati rice – 1 cup
- Jeera – 2 tbsp
- Tej pan – 2
- Star anise – 2
- Chopped carrot – 1/2 cup
- Chopped – potatoes – 1/2 cup
- Green peas – 1/2 cup
- Broccoli – 1/2 cup
- Onion chopped – 1/2 cup
- fresh coriander – 1 cup
- mind leaves – 1 cup
- ginger – 1 tbsp
- salt – as per taste
- lime juice – 2 tbsp
- curry leaves – 5 to 6
- green chilies – 4 small ones
- oil – 4 tbsp
- cinnamon stick – 1 stick
- Turmeric – 1 tsp
- Garam masala – 1 tsp
INSTRUCTIONS
- Wash rice and keep aside.
- In mixer grinder add washed fresh coriander, mind leaves, ginger, salt, lime juice, curry leaves and green chillies.
- Add some water to form a paste remove it in one bowl and keep aside
- In pressure cooker add oil , jeera , tej pan , star , cinnamon stick and all chopped veggies.
- Mix well and add turmeric,salt and garam masala powder.
- Add washed rice and 4 tablespoon of mint chutney we prepared earlier.
- Add water and cook for 3 wishles.
Serve with raita.
