Vada Paav

INGREDIENTS

Every Mumbaikars favourite fast food and tourists must have street food. Its a native dish to the Maharashtrians in India. Its made out of mashed spiced potatoes and coating of spiced gram flour deep fried in groundnut oil.

FILLING

  • Mashed potatoes – 5-6
  • Mustard seeds
  • Oil – 2 tablespoons
  • Salt as per taste
  • Urad daal – 2 teaspoons
  • Curry leaves – 4
  • Green chillies – 6 chopped
  • Ginger garlic paste – 2 teaspoons
  • Sugar – 1 tablespoon
  • Lemon juice / aamchur powder – 2 tablespoons
  • fresh chopped coriander leaves – 1/2 cup

COATING

  • Besan – 1/2 cup
  • Water – 1 cup
  • Salt as per taste
  • Sugar as per taste
  • Turmeric – 1 teaspoon
  • Red chilli powder – 2 teaspoons
  • Baking soda – 2 teaspoons

INSTRUCTIONS

  1. Boil potatoes and while they are hot peel it and smash it in a bowl.
  2. Take a pan add oil, add mustard seeds, urad daal, hing, curry leaves and turmeric powder.
  3. Turn off the gas and add ginger garlic paste.
  4. Add this tempering to the mashed potatoes and mix well.
  5. Add salt as per taste and slight sugar (optional).
  6. Add lemon juice and coriander leaves and mix well.
  7. Make small flat rounds and keep aside.
  8. Take another bowl add besan, water, salt, sugar , turmeric powder , chilly powder and baking soda and mix well.
  9. Heat oil in a pan for deep fry.
  10. Add the potato balls in the besan mixture and fry till it gets slight golden brown.

Serve it with lasun coconut and groundnut chutney.
