No fail Pani Puri

Thick Rava and Maida in 2:1 ratio
Add salt as per taste.
Add water and make the dough medium thick with water. Keep kneading till atleast 5mins. Cover the dough for atleast 30mins.
Now make thin rotis and cut it in to small balls with a cutter.
Heat oil and once its hot enough start sliding puris. Flame should be on medium.
Flip a couple of time and let it become crispy and light brown before removing it.
Once it cools down store it in a air tight container.

Make sure your puris are thin so that it does not turn soft after removing.
