Spinach & Corn Quesadillas

This was my quick fix for lunch today.
The season of sweetcorn is here & this is my first sweet corn recipe of this season.

Some motivation for you to try making it for dinner 😋 Recipe on my highlights. I used @veeba_in Chipotle sauce inside and it was toooo yummy. Incase if you don't have it you can replace it with your favourite spicy sauce. Recipe for the tortillas:

For the dough take whole wheat flour, add salt , one tablespoon oil .
Knead semi thick flour by adding water.
Now make a round flat bread and cook on both sides.

For the filling:

In a mixture half crush sweetcorn.
In a pan add one teaspoon oil, add chopped spinach 1 cup.
Now add half crushed sweetcorn, spring onions finely chopped, salt, pepper powder and finely chopped green chilies.
Cook till the water dries.
Spread @veeba_in Chipotle sauce on one side of the tortillas.
Now spread the spinach and sweetcorn mixture on half of the tortillas.
Sprinkle oregano and Chili flakes.
Add mozzarella cheese and fold it.
Now cook on a pan with some butter till it gets crispy.
Cut and serve with some ketchup.
